Brinjal
Brinjal, also known as eggplant or aubergine (Solanum melongena), is a widely cultivated vegetable belonging to the nightshade family (Solanaceae). It is native to India and is now grown across Asia, the Mediterranean, Africa, and other parts of the world.
Brinjal comes in a wide range of shapes, sizes, and colors – from long and slender varieties to round and oval ones, in shades of purple, green, white, or striped. It has a spongy, absorbent flesh that takes on flavors easily, making it a popular ingredient in a variety of dishes.
Known as the “king of vegetables” in India, brinjal is a staple in curries, stir-fries, roasted dishes, and baked recipes worldwide. It is low in calories, rich in dietary fiber, and contains essential nutrients such as vitamins (B1, B6, C, K), minerals (potassium, manganese, folate), and powerful antioxidants like nasunin and chlorogenic acid.
