Mace Blades
Mace blades are the dried, lacy, red-orange aril (outer covering) of the nutmeg seed, derived from the fruit of the Myristica fragrans tree. Known for their warm, aromatic, and slightly sweet flavor, mace blades are highly prized in culinary traditions across the globe. They have a more delicate and refined flavor than nutmeg, with hints of citrus and pepper.
Mace is often used in whole blade form for slow-cooked dishes or ground into a fine powder for spice blends. It is a key ingredient in biryani, garam masala, sausages, bakery items, and savory sauces, especially in Indian, Middle Eastern, and European cuisines.
